Stephen began his career in his native city Melbourne at the award winning Circa and Onions Restaurant, working with Glen Tobias and Michael Lambie.
Prior to arriving in the UK he spent 6 months broadening his culinary knowledge working at various restaurants in the south of France and Italy.
In 2003 Stephen started work at La Rascasse under Chris Haworth and Peter Templehoff, initially as senior pastry chef then senior sous chef and promoted to head chef in 2004.
Following this Stephen has spent time as head chef at Bradleys with Simon Bradley, executive head chef at his own designed and opened kitchen Gallery before joining The Chancery’s owner Zak Jones in 2009 at the acclaimed The Clerkenwell Dining Room, becoming head chef.
In 2010 he was appointed executive chef of The Chancery supported by a deicated and energetic team including the hugely talented Matt Defranse holding the position of Sous Chef.
